Plant-Based Vegan Chocolate Cupcakes

Line 12 muffin cups with paper liners.

In a large bowl, whisk together the flour, sugar, cocoa powder, baking soda and salt until well combined.

Evenly divide the batter among the lined muffin cups, filling each about 3/4 full.

Bake for 18-22 minutes or until a toothpick inserted comes out clean. Allow to cool completely before frosting.

For the frosting: Using an electric mixer beat the vegan butter until smooth. Gradually add in the powdered sugar, non-dairy milk and vanilla extract. Beat until light and fluffy.
